Some mornings call for a green juice. Others call for waffles. I’ve stopped choosing and started making breakfasts that do both jobs: comforting, a little indulgent, and packed with ingredients that help from the inside out. My glowing skin waffles are the best example.

This is why I call them “glowing skin” waffles. Here’s what one purple sweet potato brings to the table:

  • Low in calories, high in energy. About 130 calories per 4 oz (113 g).

  • Slow-burning carbs. Roughly 28g total carbs per serving, 24g of them net carbs, with 2g protein and no fat.

  • A vitamin C powerhouse. They’re a good source of vitamin C, with nearly four times as much as an orange sweet potato. Your body uses vitamin C to make collagen, which is what keeps skin firm and bouncy.

  • Blueberry-level antioxidants. That deep purple color comes from anthocyanins, the same antioxidants found in blueberries.

  • Vitamin E for cell protection. They also contain vitamins C and E, which support the immune system and help protect cells from free radical damage.

  • Fiber for good digestion. Their fiber helps keep your digestive tract regular, and a happy gut often shows up on your face.

The short version: they’re colorful, full of antioxidants, rich in vitamin C, and a gentle source of fiber. That’s the skin supporting trifecta.

Glowing skin isn’t about one magic food. It’s about what you eat day after day. Starting the morning with something colorful, fiber-rich and loaded with vitamin C is an easy way to make that happen, and it tastes like a weekend treat. These waffles prove that eating fruitful doesn’t have to mean eating boring.

The Finishing Touch: Blueberry Compote

Here’s what the blueberries add:

  • More anthocyanins. Blueberries are one of the richest everyday sources of these antioxidants, which help protect your cells from everyday stress like sun and pollution.

  • Extra vitamin C. Another boost for collagen production, on top of what the sweet potatoes already bring.

  • More fiber. Especially if you leave some berries whole instead of cooking them down completely.

  • Natural sweetness. A warm compote makes syrup optional, so you get all the flavor without the sugar crash.

Spoon it warm over a stack of purple waffles and you’ve got a breakfast that’s as good for your skin as it looks.

Recipe

Ingredients

  • 2 cups Fresh Organic Blueberries (Blueberry Compote)

  • 1/4 cup Maple Syrup

  • 2 tbl Water

  • 1 tbl Fresh Lemon Juice

  • 1/2 Tsp Vanilla Extract

  • 2-3 cups Stokes Purple Sweet Potatoes (roasted and mashed)

  • 3 Eggs (Sweet Potato Waffles)

  • 1 cups Cottage Cheese

  • 2 tsp Baking Powder

  • 1 tsp Vanilla Extract

  • 1/2 tbl Maple Syrup

  • 1 cup Oat Flour

  • 1/2 tsp Salt

  • 1/4 cup Almond/Oat Milk (add more if needed)

  • 1 scoop Vanilla Protein Powder

Preparation

Step 1: Purple Sweet Potato Waffles: Pre-Heat Oven to 425*F. Place the whole potatoes on a sheet pan, rub with olive oil, and stab 3 times with a fork on each side. Roast the sweet potatoes in the oven for 45-60 minutes or until you can pierce them with a fork all the way through. When they are done, remove them from the oven and let them cool on the counter.

Step 2: Blueberry Compote: Add 1 cup of blueberries, maple syrup, water, lemon juice, and vanilla to a sauce pan and simmer over medium heat for 10 minutes, stir as needed. Add the last cup of blueberries stir for 7-9 minutes, stir occasionally. Remove from heat, the mixture will start to thicken and turn more jammy as it cools.

Step 3 Making The Waffle Mixture: In a Blender add the eggs, cottage cheese, vanilla, maple syrup, sweet potatoes and blend thoroughly. Pour into a mixing bowl and add the dry ingredients: oat flour, baking powder, salt, protein powder and milk of choice. Whisk together until you get a waffle batter like consistency, adding a little more milk as needed till you get the consistency you want.

Step 4 Heat up your waffle iron. Once heated spray top and bottom plates with avocado oil spray, pour in the waffle mixture, close the waffle iron and cook until the waffle light turns off or waffles are done cooking to desired likeness. Remove and repeat this step until all the batter is gone.

Step 5 Stack the waffles on a plate, top with blueberry compote and lemon zest. Enjoy!
